So, I use a ADS1115 amplificator. The result looks good. But, I have interrogations about NO2 sensor. Data streams are best handled with DMA - that way you can use the CPU for other tasks while data is being transmitted. I haven't used it, but you should check out the I2S section of the ESP32 docs. It references configuring I2S to work with the ADC and DMA. SPI can also use DMA if you go that route.
